Pumpkin Pie


  • 2 eggs
  • 16 oz. canned pumpkin
  • ¼ C. honey or Agave syrup
  • Pinch of salt
  • 1/8 t. ginger
  • 1/8 t. nutmeg
  • 1/8 t. cloves
  • 1-¼ C. evaporated milk or 1 cup heavy whipping cream
  • 1 t. cinnamon
Pour into single pie crust. Bake at 425 degrees F for 15 minutes, then at 350 degrees F for 40-50 minutes.

For mini pumpkin pies:
Bake at 425 for 15 minutes and 350 for 10 minutes.

Oregon Peach Cream Almond Pie






















  • 3 cups peaches, thinly sliced
  • 1/3 cup honey or Agave syrup
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/4 cup flour
  • 1 cup heavy cream
  • 1/4 cup sliced blanched almonds

Single Pie Crust:

  • 1-1/3 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 2-3 tablespoons cold water

Prepare pie pastry in pie dish and set aside. Toss peaches with honey/Agave syrup and almond extract. Add nutmeg, cinnamon, and flour. Spread evenly in pastry-lined pan. Pour cream over peaches. Bake in preheated oven on 400 degrees F for 35 minutes. Remove pie from oven, sprinkle top with almonds. Return and bake 5 minutes longer, or until cream is set and almonds are lightly browned. Serve completely cooled.

Sugarless Cherry Pie

  • 2 bags of frozen cherries, thawed and drained (save juice)
  • ½ C. white grape juice or apple juice
  • 1-½. T. cornstarch or 3 T. flour
  • ½ t. vanilla
  • 1/8 t. ground cinnamon

Mix apple or grape juice together with juice from drained berries. Add vanilla, cinnamon and cornstarch. Thicken in saucepan on stove. Cool! Add berries and pour into pie pastry. Cover with top pastry. Bake at 425 degrees F for 30-35 minutes.

Blueberry Pie

  • 1/3 C. honey
  • 3 T. cornstarch
  • 1/8 t. salt
  • ¼ C. blueberry juice
  • 1-½ T. butter
  • 1-½ T. lemon juice
  • 5 C. blueberries
Heat honey, cornstarch, salt, blueberry juice, butter, and lemon juice over stove until thick. Add 3 cups berries to the thickening pie filling. Lightly flour the bottom of pie pastry. Lay remaining 2 cups berries in pastry. (This is to keep crust from getting soggy.)
Bake at 325* F for 30-40 minutes.

Frozen pie: bake for 1 hr. and 30 min. to 2 hr.

Mom's Apple Pie

Heat on stove until thick:

  • ¼ C. apple juice concentrate
  • 1 T. honey
  • 1 T. flour
  • 1 t. cinnamon
  • 1/8 t. nutmeg
  • 1 t. vanilla flavoring

Add:

  • 4 apples, peeled and chopped
  • ½ C. raisins

Mix apple mixture well and pour into pie pastry. Bake at 450 degrees F for 15 minutes, then at 350 degrees for 30 minutes.

Pie Pastry:

  • 2 C. flour
  • 1 t. salt
  • 3/4 C. butter
  • 5 T. cold water
