Almond Butter & Honey Ginger Cookies


1-1/3 cup flour (1 cup whole wheat and 1/3 cup white flour)
3/4 teaspoon ground ginger
1/2 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 tsp cinnamon
1/4 cup unsalted butter, softened
1/3 cup honey
3/4 cup almond butter
1 teaspoon fresh ginger, peeled and grated
Preheat oven to 350F. Lightly grease or spread parchment paper/silpat mat onto baking sheets.
In a medium bowl sift together flour, ground ginger, salt, baking soda, baking powder, and cinnamon. Set aside.
In a large bowl cream the butter with the honey and almond butter. Stir in the fresh ginger. Pour in the flour mixture and stir just until combined.
Spoon cookie dough onto prepared cookie sheet. Gentle flatten slightly and lightly sprinkle with fructose and cinnamon. Bake for 10 minutes. Let them sit for a couple minutes on the baking sheet before removing and letting cool completely on rack. Do not over bake. Store tightly covered for a few days.

Raisin Bars

Cook on stove for 3 minutes:
  • 1 C. raisins
  • ½ C. water
  • ¼ C. butter
  • 1 t. cinnamon
  • Dash of nutmeg
Add and mix in:
  • 1 C. flour
  • 1 t. baking soda
  • 1 beaten egg
  • ¾ C. applesauce
  • ¼ t. vanilla extract
  • 1 T. honey
Spread into 8x8” greased pan. Bake at 350 degrees F for 25-30 minutes.

Yield: 8 servings

Peanut Butter Cookies

The perfect balance between sweet and salty!
  • 3 C. flour
  • 1 t. baking soda
  • 1 t. salt
  • 1 C. butter, unsalted
  • 1 C. peanut butter
  • ½ C. honey
  • 1 t. vanilla flavoring
  • 1/4 C. chopped peanuts
Instructions: Mix dry and wet ingredients in separate bowls. Combine and add 1/4 cup peanuts to dough. Roll into little balls and place on ungreased cookie sheet. Press down with fork (cross-wise). Bake at 350 degrees F for 15 minutes or until cookies are golden brown.

Yield: 3 dozen medium-sized cookies

Best Oatmeal Cookies

  • 1-½ C. flour
  • 3 C. oats
  • 1 t. baking powder
  • 1 T. wheat germ
  • 1 T. coconut
  • ½ t. salt
  • 1 t. ground cinnamon
  • ¼ t. ground nutmeg
  • 1/2 cup raisins
  • 1-¼ C. (2-1/2 sticks) butter
  • ½ C. honey
  • 1 egg
  • 1 t. vanilla flavoring
Instructions: Heat oven at 375 degrees F. Beat butter and sugar until creamy. Beat in egg and vanilla. Add combined flour, baking soda, salt, and spices; mix well. Stir in oats. Drop by round tablespoonfuls onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire rack.

Yield: 4-½ dozen
