Banana Oatmeal Muffins

  • 1-1/2 C. flour
  • 1 C. rolled oats
  • 2 t. baking powder
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 t. vanilla flavoring
  • 1 t. cinnamon
  • 1/4 C. honey or 1/2 C. sugar
  • ¼ C. milk
  • ¼ C. oil
  • 2 eggs
  • 1 C. mashed banana

Instructions: Mix dry ingredients together in bowl. Then mix wet ingredients together in a separate bowl. Combine and pour into greased muffin tin. Bake at 400 degrees F for 20-25 minutes.

Yield: 12 medium sized muffins

Hannah, thank you for sharing this recipe! I made the muffins this morning and they were SCRUMPTIOUS. :0) I made a few modifications--1/2 C. sugar in place of honey, and butter instead of oil; I also added 1/2 tsp. vanilla. They were so yummy. I took a picture of a muffin and I plan to post it on my recipe blog, giving a link to this recipe on your blog instead of posting the recipe myself.
