Strawberry Muffins

  • 2 C. flour
  • 1 C. sugar or 2 T. fructose
  • 1 t. baking soda
  • 1 t. cinnamon
  • Dash of nutmeg
  • 2 eggs
  • ½ C. oil
  • ½ C. buttermilk
  • ½ C. strawberry jam (you can also use other jams)
Instructions: Mix dry and wet ingredients in separate bowls. Combine and fold in jam. Do not over mix! Pour into greased muffin tin. Bake at 350 degrees F for 20 minutes.

Yield: 12 muffins

This recipe looks really, really tasty, but I have no idea how much sugar I could substitute for fructose. Could you possibly let me know? :0) I would surely appreciate it.

I just love how you have your recipe blog set up. It's so homey and cheery. :0) So many of these recipes sound delicious. I'll have to print a few off and show them to Mom. :0)

Mmm! I made these muffins last week. They're very yummy, especially with peanut butter. :0) I think the texture of the muffins was better the next day. Thanks for sharing this recipe, Hannah. I'll have to look around for another recipe to try out sometime.
