- 1-½ pound ground beef
- ½ C. orange or red peppers, chopped
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 T. olive oil
- 1 T. + 1 t. chili powder
- 2-½ t. cumin
- ½ t. coriander
- ½ t. oregano
- 1 t. salt
- 1 can tomatoes, chopped
- 2 C. V8 juice
- 1 can green kidney beans
- 1 can white beans
- 1 can black beans
- 2 large carrots, chopped
- 1/2 zucchini, chopped
Instructions: Fry beef and onions in olive oil (if using low-fat meat). Add peppers, garlic cloves, canned tomatoes, V8 juice, and seasonings. Cover and simmer for half-hour. Add beans and serve with rice, noodles, or fries.
