Crustless Quiche

  • 8 eggs, beaten
  • 3 C. shredded cheese
  • Dash nutmeg
  • 1 sautéed onion
  • 1 can spinach (drain thoroughly if canned)

Lightly grease baking dish with butter. Sprinkle with flour. Pour mixture into dish. Bake at 350 degrees in 9 x 13” pan for 20 minutes.
